Summer vegetables, fruits and berries

Happy Summer to you all!

Along with the hot temperatures brings fresh vegetables, fruits and berries. I found a lot of goodies at roadside stands this past week. Makes for some delicious summer meals. Grilled cheese sandwiches with slices of tomatoes and fresh basil or pesto. BLTs are another good summer meal idea. Stuffed tomatoes and good old corn on the cob is another good meal.

Fresh corn ears remind me of corn day when I was a child. Never seen so much corn in my life like what my family put away for winter. We enjoy putting berries in a bowl with torn up bread, sugar and milk poured on top. Baked oatmeal with fresh berries and milk is a nice breakfast idea too. If, like me, you don't have a garden, get out and find roadside stands. It's fresh-grown and picked and helps support local businesses.

Stuffed tomatoes

• 4 tomatoes

• Chopped bread cubes

• Herbs of choice

• Mozzarella cheese

• Precooked rice

• Browned sausage

For this recipe I mainly use my imagination. Carefully scoop the middle out of the tomatoes and put in a bowl. Add chopped cheese, herbs, rice and or sausage. I stuff the tomatoes with whatever I have on hand or needs used up. Sometimes I use Asiago cheese instead of mozzarella. My herbs of choice are fresh basil, oregano and a spritz of salt and pepper. Mix all the ingredients together and fill each tomato. Coat tomatoes with olive oil and bake at 400 for 20 minutes. Served with fresh sweet corn.
