Who doesn’t love chocolate?

Chocolate! Nearly everyone loves chocolate because it makes you feel good! Chocolate cake, cookies, hot chocolate, pie, biscotti, etc... I love making desserts using that good cocoa from Pennsylvania.

Today I'm sharing 4 of my favorite chocolate recipes. You really can have your cake and eat it too!

Chocolate Crinkles

• 3/4 cup shortening

• 5/8 cup cocoa

• 2 cups sugar

• 4 eggs

• 2 tsp vanilla

• 2 cups flour

• 2 tsp baking powder

• 1/2 tsp salt

• 1 cup 10X sugar, to roll cookies in.

Preheat oven to 350. Mix together the shortening, cocoa, sugar and eggs. Add the vanilla then the dry ingredients. Drop by the teaspoonful in the 10X sugar and shape into balls. Place on either sprayed or parchment covered cookie sheets. Bake for 10-12 minutes. Cool on racks.

Moorish Cake

One chocolate cake mix or a chocolate cake recipe

• 1 extra egg

• 1/4 cup butter

• 1/2 cup shortening

• 1 cup sugar

• 2/3 cup milk

• 1 tsp vanilla GLAZE

• 1/4 cup butter

• 3 squares semi-sweet chocolate

• 2 cups 10X sugar

Make the cake according to box/recipe directions adding an extra egg. Spread in a sprayed 11×15" jelly roll pan at 350 for 15-20 minutes. Set aside to cool in the pan. Beat the butter and shortening until fluffy. 2-3 minutes. Add the sugar and beat another 2-3 minutes. Slowly add the milk and vanilla. Whip on high for 6 minutes. Spread on cooled cake and refrigerate for an hour. Melt the butter and chocolate squares. Add the 10x sugar and beat well. Can add a bit of milk or cream to make a consistency for spreading. Spread across the cake.

Chocolate Chip Cookies

• 2 1/4 cups flour

• 1 tsp baking soda

• 1 cup butter, softened

• 1/4 cup sugar

• 3/4 cup brown sugar, packed

• 1 tsp vanilla

• 1 small pkg instant vanilla pudding

• 2 eggs

• 1 pkg semi sweet chocolate chips (12 oz)

Combine butter, sugars, vanilla and pudding mix in mixing bowl. Beat until creamy. Add in the eggs. Mix in the dry ingredients till we'll mixed. Fold in the chocolate chips. Preheat oven to 375. Drop by spoonfuls on sprayed or parchment lined sheets. Bake for 8-9 minutes. Cool on racks.

Aunt Mary's

Chocolate cake

• 1/2 cup cocoa

• 1 cup sugar

• 2 cups flour

• 1 1/2 tsp baking soda

• 1 1/2 tsp baking powder

• 1 cup mayonnaise

• 1 cup cold water

• 1 1/2 tsp vanilla

Mix all ingredients in order given and pour into a sprayed 9×13 pan. Bake at 350 for 30-35 minutes. Spread your favorite icing on the cooled cake.

Peanut butter icing

• 1 cup creamy peanut butter

• 1/2 cup softened butter

• 3 cups 10x sugar

• 1 tsp vanilla

• 3-4 TBSP milk or half & half

Mix the peanut butter and butter together till smooth and creamy. Slowly add in the 10x, vanilla and milk. Mix till nice and creamy. Spread on cake immediately.

Caramel frosting

1/2 cup butter, softened

1 1/4 cups brown sugar

1/4 cup half & half or milk

2 cups 10x sugar

Melt butter in skillet. When the butter begins to bubble, add the brown sugar and mix well. While stirring, add the milk. Keep stirring for 3 minutes. Remove from heat and allow to cool for 30 minutes. Add the 10x sugar and beat well. Icing cake immediately as this icing will harden up some. The recipe for the caramel icing was made from memories of having chocolate cake as a child. My mom apparently didn't use recipes or write anything down so it's made with my imagination!!
