Warmer weather means picnicking … with pizza?

Good day to you from the kitchen! Warmer weather calls for picnic foods made easy. Today let's make pizza! Not all pizza is served hot so I'm sharing 3 appetizers for your summer picnicking.

Roasted Veggie Pizzas (Makes 2)

3 (8oz pkgs crescent rolls

1 1/2 cups sour cream

12 oz cream cheese

1.5 tsp dried dill

1/2 tsp garlic salt

1.5 pkgs dry ranch dressing

Pint of cherry tomatoes cut in half

Cubed butternut squash

1.5-2 cups crumbled feta cheese

Press crescent rolls onto 2 jelly roll pans or round pizza pans. Bake according to pkg directions. Cool. Slice tomatoes in half and toss in olive oil and some freshly chopped garlic. Bake at 400 for 20 minutes. Cool. Peel and cube butternut squash and toss in olive oil. Sprinkle with salt and bake at 400 for 20 minutes. Cool. Is cream cheese, sour cream, dill, garlic salt and dry ranch powder together. Spread over cooled crusts. Top with tomatoes, squash and sprinkle with crumbled feta cheese. Chill and serve!

Veggie Pizza

2 pkgs crescent rolls(8oz each)

1 cup sour cream

1 pkg dry ranch powder

1 8oz cream cheese

Flatten out the crescent rolls onto a large jelly roll or round pizza pan. Bake according to pkg directions. Cool. Mix the sour cream, cream cheese and ranch powder together. Spread on pizza crust. Top with chopped veggies of choice.

Carrots, tomatoes, broccoli, onions, peppers, etc.. Top the pizza off with your favorite shredded cheese!

Another picnic favorite is fruit pizza! This is a family favorite.

Fruit Pizza

1/2 cup butter (softened)

3/4 cup sugar

1 egg

1 1/4 cups flour

1 tsp cream of tarter

1/2 tsp baking soda

1 8oz cream cheese (room temp)

1/2 cup 10X sugar

2 tsp vanilla extract

Fresh fruits

Preheat oven to 350. Cream butter and sugar. Mix in the egg. Add dry ingredients till mixed well. Press into an ungreased jelly roll pan and bake 9-11 minutes. Cool. Mix the cream cheese, 10X and vanilla. Spread on cooled crust. Top with your choice of: blueberries, mandarin oranges, kiwis, apples, strawberries or raspberries!
