Hello from the kitchen!

Today, I'm sharing a few recipes for cookies. We all love cookies, right? Aunt Barb's molasses cookie recipe came from Joe's late aunt in Lancaster County. One of our favorites!

• 3/4 cup oil

• 1 cup light brown sugar

• 1/4 cup Brer Rabbit (Green label)

• 1 egg

• 1 tsp cinnamon

• 1/2 tsp cloves

• 1/2 tsp ginger

• 1/2 tsp salt

• 2.5 cups flour

Mix all dry ingredients. Add to the rest of the ingredients and roll into 1-inch balls.

Roll in granulated sugar. Baked on cookie sheets at 350 degrees for 9 to 10 minutes. Cool on racks.

TIP: You can glaze the cookies if you choose to. Mix a little 10X, vanilla & milk and brush over each cookie.

A cookie that doesn't last long is these peanut butter cookies. Often called temptations

• 1/2 cup peanut butter

• 1/2 cup butter, softened

• 1/2 cup sugar

• 1/2 cup light brown sugar

• 1 egg

• 1 tsp vanilla

• 3/4 tsp baking soda

• 1 1/4 cups flour

48 miniature peanut butter cups, unwrapped

Cream the peanut butter, butter and sugars together. Add egg and vanilla. Stir in dry ingredients.

Roll out into approximately 48 small balls and put in sprayed mini muffin tins. Bake at 350 degrees for 12 minutes.

Cool for a couple minutes and push a mini peanut butter cup in to each cookie. Carefully remove cookies from pans.

I wish I'd kept track of how many pounds of peanut butter fudge I made over the years! A sweet treat with no thermometer and easy to whip up!

• 1 1/2 cups butter

• 2/3 cups half and half

• 3 cups sugar

• 1-18 oz. jar good creamy peanut butter

• 1-7 oz. jar marshmallow cream

Combine the butter, sugar and milk in a medium sized saucepan. Bring to a boil and then turn down to a gentle boil, stir constantly for 6 minutes. Do not walk away. It will boil over if you do!

Remove from heat and add the peanut butter and marshmallow and stir well. Pour into a sprayed 9- by 13-inch pan and allow to cool completely before cutting.

I use parchment paper instead of sprays. I've been asked many times how and where I learned to cook and bake all the things I do. I graduated from the school of hard knocks and trial and error!

When I married 37 years ago, I couldn't cook water! My spouse gave me my first cookbook in 1986, which I used to teach myself how to make all those goodies. I didn't learn from my mom or grandma. If we set our minds to it, we can accomplish anything! It's better to try and fail then not try and always wonder.
