Hello from the Kitchen!
A big football weekend is coming up. For all you football fans, I have a few food ideas to make for the big game. Pasta salad, tacos, avocado appetizer, homemade pizzas or vegetable trays are just a few. Also, cold veggie or fruit pizza are tasty finger foods. I'm not a football fan, but I do enjoy the commercials. Here are a few recipes.
Veggie pizza
2 pkgs crescent rolls
1 cup sour cream
1 envelope dry ranch powder
1 (8oz) cream cheese (room temperature)
Fresh veggies cut into bite sized pieces
Flatten out crescent rolls into a large pizza pan or cookie sheet. Prick dough with a fork and bake for 10 minutes at 350. Let cool. Mix the sour cream, cream cheese and ranch powder. Spread on the crust. Top with your favorite veggies and cheese. I also top with some dried herbs and spritz some olive oil across the pizza
before serving.
Avocado appetizers
3 avocados peeled and halved
10-12 cherry tomatoes
10-12 mini mozzarella balls
Fresh chopped basil
1 tbsp chopped garlic
1/4 cup Italian or Greek dressing or
Infused olive oil
Place the halved avocados on a plate. Add the mozzarella and tomatoes. Top with dressing then fresh herbs. Can sprinkle with any herbs you like. Serve immediately.
• Note- When I buy mini mozzarella balls, I get the ones that are in herb infused olive oil and use that as my dressing.
