Christmas cookies and other goodies

3 min read

Hello from the kitchen! Happy December!

For you holiday bakers, it's time to make that list for what you want to bake. I bake year round so a whole day of baking is nothing new. I do enjoy a sand tart with a nice cup of hot coffee. My kids' favorite cookies are chocolate chip, chocolate crinkles and molasses, so I'll share those tried and true recipes with you. It may be because I wasn't in the kitchen growing up, but I have no memory of my mom making cookies for Christmas. My Gram and Aunt used to bring potato candy, white fudge and all kinds of nutty cookies. If you are in need of any cookie recipes, feel free to message me. Time to get back to the kitchen and whip up some goodies.

Eat well my friends!

Chocolate chip cookies

2 1/4 cups flour

1 tsp baking soda

1 cup butter, softened

1/4 cup sugar

3/4 cup brown sugar

1 tsp vanilla

1 small package instant vanilla pudding mix

2 eggs

1 package (12oz) chocolate chips

Combine butter, sugars, vanilla and dry pudding mix in mixing bowl. Beat until creamy. Beat in the eggs. Gradually add in the flour, soda and then the chips. Drop by spoonfuls on sheets (I use parchment paper) and bake at 375 for 8-10 minutes.

Chocolate crinkles

3/4 cup shortening

5/8 cup cocoa

2 cups sugar

4 eggs

2 tsp vanilla

2 cups flour

2 tsp baking powder

1/2 tsp salt

1-2 cups 10X sugar to roll cookies in

Preheat oven to 350. Mix the shortening, cocoa, sugar and eggs. Add in the vanilla then all the dry ingredients. Will be a fairly stiff batter. Drop spoonfuls into the 10X and form into balls. Place on cookie sheets either sprayed or parchment papered sheets and bake for 10-12 minutes. Cool on racks

Aunt Barb's

molasses cookies

3/4 cup vegetable oil

1 cup brown sugar

1/4 cup Brer Rabbit Molasses (green label)

1 egg

1/2 tsp each of cloves and ginger

1/2 tsp salt

1 tsp cinnamon

2 tsp baking soda

2.5 cups flour

Mix all the dry ingredients. Add in the rest and mix well. Roll into balls. At this point you can roll the balls in granulated sugar then bake or wait and brush a 10X glaze on after they cool. Bake at 350 for 8-10 minutes.

Glaze: (optional)

2 cups 10X sugar

3-4 TBSPs half and half or cream

1 tsp vanilla

Mix together and spread on cooled cookies
