Have your cake and eat it, too!

Hello from my kitchen! Did you know that you can have your cake and eat it too? Today I'm sharing a few favorite cake/cupcake recipes with you.

Moorish Cake

One chocolate cake recipe or a chocolate cake mix

1 extra egg

1/4 cup butter

1/2 cup shortening

1 cup sugar

2/3 cup milk

1 tsp vanilla

Glaze:

1/4 cup butter

3 squares semi-sweet chocolate

2 cups 10X sugar

Make the cake according to directions, adding the extra egg. Baked in a greased 11 x 15" jelly roll pan @350 for 15-20 minutes. Cool. (Leave cake in pan). Beat 1/4 cup butter and 1/2 cup shortening till fluffy. 2-3 minutes. Add one cup granulated sugar and beat another 2-3 minutes. Slowly add 2/3 cup milk and vanilla. Whip on high for 6 minutes.spread on cooled cake and refrigerate for an hour. Melt 1/4 cup butter and chocolate squares. Add the 10X and beat. Can add a bit of milk to make it a good consistency for spreading. Keep refrigerated.

Cream filled cupcakes

6 cups flour

4 cups sugar

2/3 cup baking cocoa

4 tsp baking soda

2 tsp salt

4 eggs

2 cups milk

2 cups vegetable oil

2 cups water (room temp)

2 tsp vanilla

Filling:

1/2 cup butter, softened

1/2 cup shortening

4 cups 10X sugar

2 tsp vanilla

Mix all cupcake ingredients in order given. Pour into cupcake fillers 3/4 full. Bake at 375 for 15-20 minutes. Cool. Mix together all of the filling ingredients. Put the filling in a large icing bag and use a large holed tip. Shoot the filling down through the tops of the cooled cupcakes. Top with your favorite icing.

6 dozen cupcakes!

My most favorite icing (Caramel)

1/2 cup butter

1 1/4 cups packed light or dark brown sugar

1/4 cup half & half or milk

2-3 cups 10X sugar

Melt butter in cast iron skillet. When the butter begins to bubble, add the brown sugar and mix well. While stirring, add the milk and boil vigorously for 3 minutes. Remove from heat and whisk in the 10X sugar. Whisk till no sugar lumps. Icing will thicken up as it cools. Ice your favorite cake or cookies.

Desserts and pastries have come a long way since I was a child. My Mom's go-to dessert was chocolate cake with caramel icing. It took me 15 years to master exactly how she made it. There wasn't a recipe, but throwing ingredients together, out came the magical, almost-hard caramel icing. My suggestion to all you bakers is, write down how you make something.
