Hello again from Bev’s Kitchen!

I’ve had some inquiries about any gluten free recipes I might have. Here are a few I’ve used when I was catering.

Gluten free meatballs

• 1.5 lbs Hamburg

• 2 eggs

• 1 c milk

• 3/4 c gluten free bread crumbs

• 1/2 c Parmesan cheese

• 2 tsp garlic powder

• 2 TBSP dried parsley

• 2 TBSP oregano

Mix all ingredients together and form into balls. Either pan fry till no pink or bake on a sheet at 350 degrees for 25 to 30 minutes. Serve with your favorite sauce.

Gluten free mac

and cheese

• 8 oz gluten free macaroni

• 3 TBSP butter

• 2/3 c cream

• 1/4 c milk

• 2 cups shredded cheddar

• 1/2 c grated parm

• 1/2 tsp salt

• 1/2 tsp seasonal salt

Cook pasta according to pkg directions. Put all ingredients in sauce pan and slowly heat till cheeses and butter are melted. Pour over hot macaronis and serve. Can also bake in 350 oven for 20 minutes.

Gluten free Quiche

One 9-inch pie plate

• 2 large sweet potatoes, peeled and sliced

• 3 TBSP olive oil

• Toss the peeled potato slices in oil and lay in pie plate overlapping and covering the plate completely so it resembles a crust. Sprinkle with pepper and garlic powder. Bake in 375 degrees oven for 20 minutes.

Cool a few minutes.

• Large handful fresh spinach

• 1/4 c chopped sundried tomatoes

• 4 large eggs

• 3/4 cup milk (any kind)

• ½ to 3/4 c goat cheese crumbles

• Salt

• Pepper

Put spinach in bottom of crust. Add all ingredients except the goat cheese. Sprinkle goat cheese crumbles on top and bake in oven at 375 degrees for 30 to 35 minutes or until set up.

Gluten free

cucumber salad

• 1 or 2 cucumbers, sliced

• 1 bell pepper, chopped

• 1 pint grape tomatoes

• 1/2 c Kalamata olives

• 1 red onion, peeled and sliced

Juice of one lemon

• 1 c feta cheese

• 3 TBSP light olive oil

• salt

• pepper

• fresh oregano leaves, chopped fine

Mix all together and toss. Serve immediately.
