Where’s the beef? Waynesburg Meat Shop in Big Valley
BELLEVILLE — Nestled in the Big Valley, Sheldon and Diane Graybill have owned and operated their family dairy farm on Waynesburg Road in Belleville for more than half a decade.
The Graybills live on the farm with their six children, ranging from ages 3 to 11. While the farm is profitable, Sheldon saw an opportunity for additional revenue by opening a meat shop recently.
The Waynesburg Meat Shop, located at 213 Waynesburg Road, is a small custom country butcher shop that offers quality meat processing services for beef, pork and deer.
“COVID jumpstarted it a little bit,” Sheldon recalled. “I had some neighbors with knowledge. I had a family on the way that is going to need to work some. That’s where the idea was born.”
Josh Yoder, the Graybill’s neighbor, works as the manager of the meat shop.
“Business has been good,” Sheldon said. “There’s been a good response over deer season. Summer is definitely a slower time for us, but it works out great with farming and the outdoor chores. The meat shop was something that there’s definitely a demand for. We are busier than we expected.”
As far as their mainstays, beef can be processed as steaks, roasts, hamburger patties or hamburger and vacuum packed and frozen to fill your freezer. Don’t have beef? The meat shop can get angus or holstein beef.
Pigs can be processed to satisfy any breakfast cravings with regular or hot sausage, pork chops, regular or Canadian bacon; and cured ham as the most popular options. If you want to have family and friends over for a pig roast, the meat shop can provide a scalded and scraped roasting pig.
Since hunting is a captivating sport in the Big Valley, the meat shop can process your deer straight from the woods. They can handle the complete processing, with a package deal of all specialty cuts and hamburgers or get snack sticks, ring bologna, lebanon bologna and hot dogs made from your deer.
Have too much burger? The meat shop also makes regular, sweet or hot snack sticks; regular, garlic or hot ring bologna; regular or garlic summer sausage; regular or sweet Lebanon bologna; and hot dogs. Pepper jack or cheddar cheese can be added to any of these items.
Spring kill dates are also available for your beef or pig. They also have 1/8 beef boxes available for pickup with angus Delmonico, New York strip, sirloin, filet mignon, flat iron and bottom round steaks. They are all deboned and ready for the grill. Hamburger patties are also available in the beef boxes.
Coming this fall, the meat shop expects to provide customers with grass-fed and grain-fed Angus x, Wagyu x and Holstein beef from their farm.
In the future, they would also like to add a retail store “as long as we can stay busy,” Sheldon said.
Shop hours are 8 a.m. to 4 p.m. Monday through Friday and Saturdays by chance. The meat shop accepts cash or checks only.
