Fresh Strawberry Pudding
Ingredients:
• 1/2 cup sugar
• 2 Tablespoons cornstarch
• Pinch of salt
• 1 1/2 cups milk
• 7 ounces pureed fresh strawberries
• 2 egg yolks
• 1 teaspoon vanilla extract
Instructions:
1. In a saucepan, combine sugar, cornstarch, salt, pureed strawberries, and milk.
2. Bring to a gentle boil, stirring all the time. As soon as it boils, remove from heat.
3. In a bowl, mix egg yolks.
4. Slowly pour in milk mixture and stir.
5. Return to the saucepan and bring to a gentle boil. Continue stirring.
6. If more sugar is needed, add a tablespoon at a time.
7. Remove from heat and add vanilla extract.
8. Transfer to a bowl to cool and serve.
