Cheese guild honors Extension dairy specialist

Kaylegian recognized for cheese activism

UNIVERSITY PARK — Kerry Kaylegian, assistant research professor of dairy foods and extension specialist in Penn State’s College of Agricultural Sciences, was inducted into the Guilde Internationale des Fromagers New World Chapter on July 28 in a ceremony held in association with the American Cheese Society’s annual meeting in Pittsburgh.

The Guilde Internationale des Fromagers is a nonprofit organization of cheese professionals with the mission of promoting and stewarding cheese traditions and know-how, and supporting the people working in the industry.

Kaylegian, who judges national cheese contests and who was instrumental in starting an annual cheese competition five years ago at the Pennsylvania Farm Show in Harrisburg, was honored with inclusion in the guilde for her efforts to promote quality cheesemaking in Pennsylvania and beyond.

Last year she developed the “Penn State Cheese Tracking System,” an online guide to help small cheesemaking operations record, track and evaluate data for milk composition and quality, the cheesemaking process, processing after the initial cheesemaking day, cheese chemical composition and cheese sensory characteristics.

She is currently conducting research aimed at developing resources to help small-scale cheesemakers meet their requirements under the federal Food Safety Modernization Act.
