Hello, my name is Julia Mummau and I am a Juniata County Dairy Miss.
I live on a farm in East Waterford with my dad, mom, sister and brother. I go to school at Lack Tuscarora Elementary School and I am in the second grade.
Before and after school, I like to drink a big cup of milk. Chocolate milk is my favorite. I like to have a healthy snack of yogurt and string cheese. After supper, my favorite dessert is ice cream. I like peanut butter ice cream. I know it is important to eat dairy foods to keep me strong and healthy. Here is a meal using dairy foods.
Taco Casserole
1 pound ground beef
1 small onion, chopped
1/2 teaspoon garlic powder
1 (1.25-oz.) envelope taco seasoning mix
1 (8-oz.) can tomato sauce
1 cup sour cream
1 cup cottage cheese
2 cups crushed tortilla chips
2 cups (8-oz.) shredded cheddar cheese
Preheat oven to 350 degrees.
In a large skillet, brown ground beef; remove from heat and drain off any excess liquid. Add onion, garlic powder, taco seasoning mix and tomato sauce; mix and set aside.
In a medium bowl, combine sour cream and cottage cheese; set aside.
Place half of the crushed chips in bottom of a 2 1/2-quart casserole dish that has been coated with nonstick vegetable spray. Add enough meat mixture to cover chips, then cover meat with half of the sour cream mixture. Sprinkle with half the shredded cheese. Repeat layers. Bake uncovered for 30 to 35 minutes until cheese melts and casserole is heated through.
