Recipes are for moms and kids

Hi, I'm Macy Fisher the Mifflin County Dairy Princess. I am very sorry for not having an column last week. It truly just slipped my mind. I feel terrible because I know that a lot of you are dedicated readers and look forward to certain stories and columns every week but I truly am sorry.

I was glad to see that it finally warmed up this week, although it didn't have to get quite as hot as it did. The heat didn't slow me down any though. On Saturday I had to have my dairy beef and sheep at the fairgrounds for tag day. It used to be that the club leaders or FFA advisors had to go to each farm and tag the animals, but they found that this was inefficient and spread disease. With the tag day, none of the animals ever come in contact with other animals and everything is being kept clean. Leaders now meet at the fairgrounds and tag the animal on the trailer, then step in a foot bath to clean off any germs.

In Mifflin County, I think that the animals also are weighted, but in Huntingdon County they don't. So now our sheep and dairy beef are currently ready for the fair.

This week's recipes have to do with the upcoming weekend. This Sunday is Mother's Day and these recipes are sure to be fun for all mothers! The recipes are kid friendly recipes that all moms and kids can make together for a day full of memories sure to last mom a lifetime of happiness. Now when cooking with kids there are a few rules. First they must always be in constant supervision. Also when it comes to a step that deals with heat or sharp objects, you may want to step in and take control. These recipes are fun to do, though, with your kids. They will be able to sprinkle cheese or spoon yogurt. These recipes are also an easy way to make sure that your kids are eating healthy. All of the recipes are packed full of nine essential nutrients that will be fun for them to eat. They're kind of like the gummy vitamins, but they are dairy delights.

Quick Pizza Snacks

3 English muffins, split and toasted

1 small jar pizza sauce

3/4 cup shredded mozzarella cheese

18 pepperoni pieces

Other pizza toppings

Preheat oven to 350 degrees. Place muffin halves on ungreased baking sheet. Top each muffin with sauce and sprinkle with cheese. Place pepperoni and other toppings on pizzas and bake about 5 minutes or until cheese is melted.

Easy, Cheesy Nachos

1 can (1-lb.) refried beans, warmed

1 1/2 cup shredded Monterey Jack cheese

2 tablespoons chopped green pepper(can use jalapenos, if preferred)

Thick and chunky salsa

Sour cream

Tortilla chips

Additional toppings, such as chopped green onions or guacamole. if desired.

Spread beans over bottom of regular sized dinner plate or serving platter. Arrange chips over beans. Top with shredded cheese and peppers. Microwave on high for 30 seconds to 1 minute. Top with salsa and sour cream.

Banana Tot Pops

3 firm, medium bananas

6 large wooden popsicle sticks

1/2 cup raspberry or other flavored yogurt

1 jar chocolate or rainbow sprinkles

Cut each banana crosswise in half. nsert wooden stick into each half. Pour yogurt into small bowl. Hold banana pop over bowl; spoon yogurt to cover all side of banana. Allow excess to drip into bowl. Sprinkle sprinkles over yogurt. Place pops on wax paper lined tray. Freeze for 2 hours.
