Guilt-free New Year’s recipes

Hi, I'm Macy Fisher the Mifflin County Dairy Princess.

This week has been very easy. The only promotion I had this week was the Great Chip Drop. I wasn't in there for the whole evening, but I was there for a while. I was inside the Mifflin County Historic Courthouse, handing out dip samples and recipes.

When Mom and I arrived at home, Mandy already had all of the snacks made. She made hot wings, meatballs and little hot dogs. I didn't even make it until midnight. I usually can stay up way past midnight, but the one night that you are supposed to stay up, I fell asleep.

I am not a huge fan of sleeping. I know, I'm nuts but for some odd reason I can run on only a few hours of sleep. Mom tells me all the time that I never slept as a baby, either. In fact, when Mandy came along, Mom would go and check on her to make sure that she was still alive because she would sleep all the time, unlike me.

Mandy and I then went on an adventure on Sunday. Mandy, Uncle Corey, and I went to buy some rabbits off of his friend Eric. We bought three baby Flemish Giants and eight cross breeds. The Flemish Giants are so cute! Two of them are white with light brown spots and the other is all light brown. They are eight weeks old and are little right now but they won't be for long. Flemish Giants when full grown can weight over 20 pounds!

That's about how much weight that I would like to lose. My New Year's resolution is to lose a little bit of weight just because lately I have been hitting the potato chips a little hard. I know that a lot of other people have the same resolution, so I thought that I would give everyone some sweet recipes that are guilt free. They are full of dairy goodness and nine essential nutrients, which help to make it guilt free.

I hope that everyone had a wonderful New Year's and stayed safe. Also I would like to wish a Happy 2012 to everyone.

Hawaiian Wedding Cake

1 package yellow cake mix

1 1/4 cups buttermilk

4 egg whites

1 egg

1 package (8-oz.) reduced-fat cream cheese, cubed

1 cup cold 2 percent milk

1 package sugar-free instant vanilla pudding mix

2 cans (8-oz. each) unsweetened crushed pineapple, drained

1 carton frozen fat-free whipped topping, thawed

1/2 cup flaked coconut, toasted

In a large bowl, combine the cake mix, buttermilk, egg whites and egg; beat on low speed for 30 seconds. Beat on medium speed for 2 minutes. Transfer to a 13x 9 inch baking pan coated with cooking spray. Bake at 350 degrees for 25 to 30 minutes or until a toothpick inserted near the center comes out clean. Cool on wire rack.

In a small bowl, beat cream cheese until fluffy. Gradually beat in milk; add pudding mix until well blended. Spread over the cake. Top with pineapple and whipped topping. Sprinkle cake with coconut. Store in the refrigerator.

Chocolate Cake

1 package devil's food cake mix

1 1/3 cups water

1 cup reduced-fat plain yogurt

1/2 cup baking cocoa

2 egg whites

1 egg

1 1/2 teaspoons confectioner's sugar

In a large bowl, combine the cake mix, water, yogurt, cocoa, egg whites and egg; beat on low for 30 seconds. Beat on medium for 2 minutes. Pour into a 10-inch fluted tube pan coated with cooking spray. Bake at 350 degrees for 35 to 40 minutes or until a toothpick inserted near the center comes out clean. Let cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioner's sugar.
