WELCA compiles church’s first cookbook
BEAVER SPRINGS – Beaver Lutheran Church’s Women of the Evangelical Lutheran Church in America have cooked up a collection of more than 370 recipes to share with the public.
Every dish – from scrambled eggs to cheeseburger chowder – has been compiled in the church’s first cookbook. Sara Mattern, secretary at the church, said recipes were submitted by present and past members of the church and former pastors.
“The recipes are generally down-home cooking,” she said. “And, of course, the majority of the recipes are in the dessert category.”
The book is being offered for sale by Beaver Lutheran’s WELCA. Mattern said the group consists of seven or eight women at the church who provide assistance and help with emergency funding in the church and local community. She said WELCA also has provided a complete Christmas meal for families in the past and offers aid to those in need.
Cookbooks cost $15 each, plus $6 shipping, and proceeds benefit WELCA’s outreach.
Mattern said the women began compiling the book in September, with hopes of Christmas delivery.
“We received our order the week before Christmas,” she said, after the book went to press in late October.
The cookbook features a variety of dishes, including Bonnie Mattern’s cranberry salad, which is made for the church’s annual Thanksgiving Day community meal:
1 lb. cranberries
1 c. celery
1 c. walnuts
1 c. crushed pineapple, drained
2 (3 oz.) cherry Jello
2 c. sugar
2 c. boiling water
Chop cranberries, celery and walnuts. Add crushed pineapple. Mix. Add Jello and sugar into boiling water and stir till dissolved. Combine mixtures, refrigerate till set, stir and serve.
Sara Mattern said the variety of recipes also includes instructions for scrambled eggs, submitted by the pastor’s young son. Thomas Baker-Trinity’s dish requires only three ingredients and instructs cooks to “Stir. Keep stirring. Stir some more. Stir until done. Don’t forget to turn off the burner.” Another recipe was submitted in memory of a church member’s late aunt.
The cookbooks are available for purchase through the church office and at the following upcoming fundraising dinners:
Pork and sauerkraut dinner – 4-7 p.m., Jan. 1;
Youth spaghetti supper – 4-7 p.m. Jan. 18;
Valentine’s Day baked spaghetti dinner – 4-7 p.m. Feb. 14;
Ham and dandelion dinner – 4-7 p.m. March 22.
